Most of our work happens weeks before you sit down. The last part takes about as long as a drink.

Calder opened in a former ironworks on 4th Avenue with one grill, one aging room and three farms we could drive to before lunch. That hasn't changed. Whole sub-primals arrive on Mondays and rest on salt-brick racks until the bark is dark and the flavor turns nutty.

Every steak is cooked over split white oak, rested on the board, and sliced at the pass. We season with salt and fire, and we'll tell you honestly if a cut isn't ready yet.

Beef comes in fresh on Monday, ages in the back, and goes over the fire when it's ready. If we run out of a cut, we run out.

The 45-day ribeye had a funk and depth I've only had in New York. Service knew every farm by name.

Sat at the bar with no reservation, had the burger and two pours from their barrel pick. Best seat in Nashville.

★★★★★ The Tennessean

Calder cooks with restraint. Salt, oak, time, and the confidence to leave the plate alone.

A brick-vaulted room below the dining floor, with one long table, our wine cellar along the walls and a set menu built around the porterhouse. Rehearsal dinners, partner dinners, and birthdays that deserve a bigger knife.
